The process of cleaning equipments using chemicals to reduce or prevent growth of spoilage organisms is sanitization. The organisms that grow in these apparatus include; bacteria, molds and yeasts. It is advisable to clean the equipment before sanitizing. This is to remove the visible residues.

There exist two preferred methods of removing dirt from equipments. When scrubbing the fermentor, a cleaning solution should be used. No much time is consumed but it has a defect as elbows gets greased. The other way is using a mixture of water and chemicals, the fermentor soaked, and given sometime to clean.

A combination of the two methods is the ideal bet as time used to wait the chemical clean is reduced and also the much scrubbing is no more. The equipment can be soaked for about 20 minutes as a cleaning solution is added. Thereafter, slight scrubbing is required to ensure all the residues are done away with.

There are new cleaning chemical by name percarbonates. They are a combination of hydrogen peroxide and sodium carbonate. In addition it has other secret ingredients which brings the difference with other cleaning chemicals. Their effectiveness in removing dirt from used equipment is beyond any doubt. A degree of sanitation is brought about by the hydrogen peroxide included. The percarbonates have an added point over others in that they are Eco-friendly.

Thorough cleaning of the equipments is followed by sanitizing. There is a variety of sanitizing chemicals namely; potassium metabisulfite, campden tablets as well as sodium metabisulfite and all these should be added to water to make a solution. The solution is then used to soak the equipments for around 5-30 minutes. Potassium bisulfite being a good preservative chemical is used in wines as well as cleaning bottles and corks.
