By Carmella Watts

Gourmet beef jerky are quite easy to make. One should make sure to get high-quality lean meat to process. The chosen lean meat will be trimmed to remove the fat, cut into thin strips, marinated, salted, and then dried. When the processed lean meat are preserved properly, it will surely make an excellent snack.

There are two kinds of these delicious meat. One is the commercial product while the other one is the homemade product. The homemade product should be preferred more, though. After all, it is not only a safe meat to it but delicious as well. The flavor of the homemade one can be mixed according to the maker's personal tastes.

For those who are going to make homemade products, there are several tips that they should be able to use. For example, make sure that the proper ratio for the protein-moisture content is observed during the drying process. It can also be preserved since the meat's dryness is at a level where bacteria cannot grow.

There is also a need to pick the right cut for the meat. The best choice that one can make use is the lean cut meat such as round eye, sirloin, or top round cut. Remove the fat of the meat too. It is also appropriate to chop the meat into slices. When slicing, make sure to decide whether wider strips are preferable or the thinner ones are.

If the person is slicing the said meat, it is a good idea to make use of a very sharp and thin knife. The best way for the person to slice the meat is to do it against the grain. There is a benefit to that, after all. Cutting the meat against its grain will surely make the slice of meat easier to chew when one is finished preserving it.

Marinade it as well. The meat strips should be properly soaked in marinade. Do this for half a day or for an entire night. Refrigerate this marinade as well. If the meat is marinaded properly, it should absorb whatever flavor the marinade is made of. This is also the best way for the person to cure the meat used in this meat preservation procedure.

Be sure to prepare the meat for drying. The person may make use of the grill or the oven to dry the meat. It should make it safer to heat the meat briefly to about 70 degrees Celsius or 160 degrees Fahrenheit. Do not cook the meat. Just heat it up to this temperature for a few minutes. Sprinkle some salt on top of the meat slices to help with the dehydrating process.

The preparations for this process should be carried out properly. After that, one has to think about the actual process. For the actually drying process, it is a must to apply a coat of non-stick cooking spray onto the rack before it is used for the said process. This is so that the meat do not stick to the rack unnecessarily.

Storage is another matter that one has to consider in making homemade gourmet beef jerky. The homemade product should be placed in plastic bags or containers. It should then be stored in a refrigerator or freezer. Homemade ones can be eaten within one to two months compared to the 12 months shelf life of the commercial product.
