By Donald Cook

Given that the vegan demand is growing fast and reaching more and more people, many major companies started producing vegan food, snacks or sweets. You can get them almost everywhere now and there are a lot of options. If you prefer to make your own food and are just starting the vegan diet you may ask yourself what can you use to as an egg substitute for vegans. It is way easier with the milk or butter.

The good news is that there are several that you can use, depending on what you want to cook. Some of them are sweeter, such as the substitutes from fruits, so they are great in cakes. If you want to bake something with vegetables, avocado has a plain taste and would be perfect. Let's discuss a bit the various healthy alternatives available.

One simple option is to use flaxseed meal, as it is easy to make and adds a lot of nutrition to your food. To substitute one egg, you would need to use mix 1 tablespoon flaxseed meal to 3 tablespoons of water and let it sit for around 5 minutes before using it.

Other seed based option is the one using chia seeds. You need to mix them same as above, 1 tablespoon of chia seeds or chia powder with 3 tablespoons of water. Let it sit for 5 minutes and it is ready to be used. Take into account that this mix would be a bit darker, so it is not advisable to be used for light colored goods.

There are also quite a few ready-made egg replacements that you can try. The mix would be a bit lighter than seed ones and have different colors or tastes, based on the brand and ingredients. Check the labels, as some are gluten-free. Follow the written instructions on the packages to get the best results.

Some fruits also make a great egg replacement, especially for cakes and cookies. It is very affordable, as probably everyone has some of these in the kitchen or pantry. You can puree bananas or pumpkin or even use mashed sweet potato, avocado or butternut squash. If you cannot get or do not have these, try using unsweetened applesauce. Pear butter is also an option, if you like pears.

When deciding which one to use, take into account that some of them have a strong sweet taste that may affect the batter. Or even the color, for those that are bright yellow, for example. The applesauce is one of the plainest and can be used in many recipes. If you decide to use other fruit puree that may give a weird color, mix them in with chocolate or coffee.

Now that you know what to substitute the egg for, here are some recipe ideas that you can try: various types of cookies, such as almond flour or pumpkin chocolate chips one. You can also make some amazing vegan muffins with fruit puree and flaxseeds or pancakes, using only flaxseed as substitute. Or why not, invent your own combinations based on your own ideas and taste and experiment. Either way, there are so many options that you can try and surely you will find the perfect ones for you.
